Vegan Blueberry Lemon Protein Bars 

Looking for a protein pick-me-up? These homemade protein bars are rich in fiber, plant-based and top 8 allergen friendly. Enjoy!

Ingredients:

  • 1 1/2 cups (or a bottle) of OWYN Vanilla Pro Elite High Protein Shake
  • 2 Tbsp of maple syrup (optional) or use 4 Tbsp of monk fruit sugar
  • Juice from 1 lemon
  • Zest from 1 lemon
  • 2 cups of gluten free pancake mix
  • 1/4 cup flax meal
  • 1/4 cup chia seeds
  • 1/4 cup gluten free rolled oats
  • 1 cup of fresh or frozen blueberries


Instructions:

  • Preheat oven 350°F
  • Line 9x11 sheet pan with a parchment paper
  • In a bowl, mix wet ingredients
  • In a bowl, mix dry ingredients
  • In a bowl, combine and mix wet and dry ingredients then carefully fold in the blueberries to the batter
  • Place the batter in the parchment lined sheet pan
  • Bake for 35-40 min until the top is golden brown
  • Cool the bars completely before cutting
  • Store the protein bars in the air tight container in the fridge for up to 10 days
