1 Tbsp golden flax meal 1 OWYN 32g Vanilla Pro Elite High Protein Shake, divided ¾ cup gluten free flour blend with xanthan gum 1 ½ tsp baking powder 1 tsp vanilla extract ¼ tsp salt …› tsp liquid monk fruit extract ½ cup mixed fresh berries (optional) Method:
In a medium bowl, combine flax meal with ¼ cup OWYN Vanilla Pro Elite High Protein Shake. Allow to sit for 5 minutes to thicken. Add the remaining shake, flour, baking powder, vanilla, salt, and monk fruit; stir until combined. Heat mini waffle maker and lightly coat with neutral oil (grapeseed, canola, or sunflower) if waffle maker manual directs. Pour ¼ cup batter on the bottom plate of the waffle maker and spread evenly. Close and cook until steam is no longer releasing, about 3 minutes. Serve while hot with mixed berries if desired. Serving Size: Four mini waffles with ¼ cup mixed berries (optional)
For larger waffle makers:
Heat standard waffle maker on the lowest setting. Pour about ½ of the batter (about 1 cup) on the bottom plate of a standard waffle maker, spreading evenly. Close waffle maker and cook until steam is significantly reduced and waffle holds together when the waffle maker is opened, about 10 minutes.
