Whether you’re looking for a sweet spring treat to share, or something delicious to enjoy on your own, these Vegan Air Fryer Blueberry Protein Doughnuts have you covered.
1. In a large bowl, add the gluten free flour, OWYN Smooth Vanilla Plant Protein Powder, baking powder, baking soda, sugar, and vanilla extract. Whisk to combine.
2. Add in the yogurt and mix with a spoon until a shaggy dough forms. If the mixture seems a little dry, add in ~2 Tbsp more yogurt. Knead with your hands in the bowl a couple of times to make it fully come together.
3. Fold in the blueberries.
4. Lightly flour a surface and continue to knead the dough with your hands until it becomes soft and bouncy (this will take about 5 minutes).
5. Roll the dough out to ¾” thickness. Using a cookie cutter, mason jar lid, or a cup, create circles and remove (should make 10-12 mini donuts). Then, using a smaller round lid or cutter, pop the inner circle hole out to create the donut shape. Place the donuts on a baking sheet lined with parchment paper.
6. Brush the tops of the donuts with vegan melted butter spray and place the donuts in the air fryer. (Multiple batches).
7. Air fry at 350F for 8-9 minutes, or until golden and raised.
8. While the donuts are in the air fryer, make the blueberry protein glaze. Heat the blueberries in a small bowl in the microwave for 45 seconds.
9. Mash slightly with a fork. Then, whisk in the powdered sugar, OWYN Smooth Vanilla Plant Protein Powder and OWYN Smooth Vanilla Protein Shake.
10. Once the donuts are done, dip the tops into the glaze. Enjoy!
